My Interests are in the areas of modeling of transport phenomena in food processes, food material science and food package engineering.
Specific research themes include: applications artificial neural networks (ANN) and knowledge discovery in databases (KDD) or data mining to understand patterns in data related to food processing, properties, storage tests and consumer response; understanding molecular mobility to improve physicochemical stability in low-moisture and frozen foods, stability of neutraceuticals in foods during processing and storage; development of bio-based packaging made from biodegradable and environmental friendly materials such as agricultural feed stock and marine fauna.
